In the original recipe of the pesto sauces, Agrinitti uses raw materials from Apulia: fresh basil, garden rocket, peppers and almonds. Their quality must respect very tight parameters like the freshness of ingredients. The artisanship requires an accurate control. The quality, the artisanship and the balanced taste made them highly appreciated by consumers.
Almond is a fruit native to Asia, now cultivated throughout the Mediterranean basin. The edible part of the seed is white, oily and it has a pleasantly sweet flavour. It is rich in nutritional energy and biodynamic principles that give a high-energy intake. Almonds contain Vitamins: B1, B2, PP and provitamin A. Minerals: potassium, sodium, calcium and iron. Contraindications: we not recommend the overuse for its positive characteristics.

Variants:

• Apulian pesto sauce: the basil is a plant native to warm areas of Asia and Africa, now seasonally widespread everywhere and used for culinary purposes. Its leaves contain a highly fragrant essential oil and they have digestive, anti-inflammatory and anti-catarrhal properties. Gluten-free product.

• Garden rocket pesto sauce: the garden rocket is a spontaneous herb. Its characteristic is the intense aroma and spicy flavour due to the presence of a glycoside, which produces a thiocyanic essence with stimulant-acting, digestive, purifying and tonic action. Gluten-free product.

• Pepper pesto sauce: the pepper is plant native to Central America that have well flourished in Apulia too. It can have different shapes and colours. One can find it yellow, green and red. It may have a round, elongated, or cubic shape. However, it is always big and fleshy. They contain vitamins: B1, B2, C, PP and provitamin A. Minerals: magnesium, manganese, sulphur, phosphorus, calcium. Gluten-free product.

Recommended use as a spreadable cream on croutons or as a condiment for pasta dishes.
